This cake was baked inspired from the idea of Willo-the-wisp and ghost light which is meant to misguide travellers from their path by resembling a flickering lantern. It is seen mostly over swamps bugs and marshy lands.
In literature this is used metaphorically to resemble a feeling of hope or a goal which we want to achieve but seems like quest which never ends. An idealism which seems negative. But some of us face such mixing-up in our everyday life. This echos to me the mental state of the key worker who wants her unending shift to end, the doctor who is trying to save his patient or the scientist who is working round the clock to find a vaccine.
We are still on the other side of the ghost light, we are mere blinks very much a part of the phase which ran through the time before and will run through the time after. Some of us will remain unscathed while the others will surrender in form to this ghost light. You can do a little something to bring about that change no matter how utopian it seems now. Be it through volunteering, vulnerable ones staying inside, helping someone in the community and even donate to the cause and research. There are so many trust worthy portals.
Easiest Banana loaf
This cake was baked for the big night in banana bread challenge. Where a voluntary donation was made to the cause of supporting people who made a difference and help support those who were affected during this extraordinary times.
This recipe is from @bbcfood and I have mastered this now. This is also my brother’s fav cake.
- – 140g butter, softened, plus extra for the tin
- – 140g caster sugar
- – 2 large eggs, beaten
- – 140g plain flour
- – 1 tsp baking powder
- – 2 very ripe bananas, mashed
- Heat oven to 180C/160C fan/gas 4.
- Butter a 2lb loaf tin and line the base and sides with baking parchment.
- Cream the softened butter and 140g caster sugar until light and fluffy, then slowly add 2 beaten large eggs with a little of the 140g flour.
- Fold in the remaining flour, 1 tsp baking powder and 2 mashed bananas.
- Pour into the tin and bake for about 30 mins until a skewer comes out clean.
- I have drizzled some jaggery on top to enjoy it during tea time.
