This desire to perfect this recipe dates back to my teens.I can bet on it if there is any soul who is not smitten by the fast food Chinese.These delicious dishes coming out of such intricate agility which is jaw dropping to watch.The best part of chinesse fast food is best enjoyed from road side make shift rudimentary kitchens where you can feel the fire on your face and splash of sauce on your lips.Then came a little more sophisticated versions called as Mobile Chinese Vans which made food the same way but they were always on the go.Today the world is surely dominated with Michelin stars and Six Sigma standard restaurants and hotels.But I felt they somewhere lost their roots.
My childhood memory is etched with numerous pleads and tantrums just to sample a simple sweet corn soup or my favorite chicken chow mein. Well gone are those days when food was an expedition but i still celebrate them in my kitchen.Here’s my ode to Chinese fast food!!

Ingredients for Chicken Chow Mein:
- 1 Garlic pod thinly sliced
- 1 Carrot thinly sliced
- 1 Green Capsicum thinly sliced
- 1/2 tsp Five spice powder
- 2 tbsp Dark Soy Sauce
- 1 tbsp Chilli Garlic Sauce
- 1 egg
- 3 tbsp Refined Oil
- 2 tsp Sesame oil
- 1 chicken breast (sliced into thin strips)
- I Packet Medium Egg Noodles
- Salt to taste
Preparation method
- Boil the egg noodles as per packet instructions for 2-3 minutes (do not over cook).Then drain it under cold running water as this arrests the further cooking and sprinkle sesame oil to prevent it from sticking.
- Scramble your egg and set aside.
- In a wok add the refined oil and fry your garlic slices until the oil is garlic flavored.Then in the garlic oil add five spice powder and saute the chicken strips until cooked (on high heat it should cook in 5 minutes).
- Finally add your veggies (capsicum and carrots) and fry them for 2 minutes.Slowly add your scrambled egg and boiled noodles.
- Then drizzle your sauces(soya and chilli garlic) and salt and stir it rigorously as agile as the Chinese man. 🙂
- Taste it and this would surely get a childhood memory back.
