When you are brought up in a place where every culture,caste and creed is own then life is beautiful.I was never forced to speak/write my mother tongue.I always emancipated the elements of culture which appealed to me.I do not like questions like what is your native place?what is your mother tongue?what is your culture like?I don’t like being tamed into one pickle jar which belongs to one state,country or continent.That is why I love food as it has no culture it is global and it can be evolved beautifully in its own way without sticking to any specific region.That is the definition of fusion cooking! Creamy Prawn Curry with Steamed Rice

 Ingredients for Creamy Prawn Curry:

  • 1 Green Chilli, 1/2 inch ginger,3 cloves of garlic (finely crushed in a pestle and mortar)
  • 1 tsp Cumin seeds
  • 4 pepper corns
  • 2 cloves
  • 2 tsp red chilli powder
  • 1 tsp turmeric powder
  • 2 cups of fresh coconut milk
  • 2 tbsp mustard oil
  • 500 gms of king prawns (cleaned and shelled)
  • Salt to taste
  • Fresh sprig of coriander leaves

Preparation method

  1. Mix turmeric, chilli powder and salt to the cleaned prawns.
  2. Add a generous dash of mustard oil in a skillet and let the strong smell of oil sublime in a minute.Gently fry the prawns as they attain the light red color.Drain out the excess oil and set aside.
  3. In a deep bottomed pan add mustard oil add the cumin seeds,cloves,pepper corn and let the aroma of these spices engulf your kitchen in a second.
  4. Then add the minced green chilli,ginger and garlic to the spices and fry it for 1 minute.
  5. Then add your fried prawns followed by adding turmeric,salt and chilli powder for seasoning your gravy.Then add your coconut milk and bring to a good boil so that the flavor of prawns and coconut cream infuse.
  6. Finally garnish with finely chopped coriander and combine it with piping hot white rice for serving.
  7. This recipe is so light and subtle in flavor that you cant help but asking for more.Go a little light on your heart as coconut milk is quite fatty. 🙂
