Basil leavesBasil LeavesHK: Do you get a chance to grab a breakfast?

WW1: I need to rush to catch the first tube as I have a meeting lined up. I mostly miss my breakfast.

WW2: Oh mornings are such hardwork? I need drop my kid at school. I need to see off my hubby while I check on my daily mails. I generally roll up a quick wrap or grab a sandwich and coffee at the nearest coffee-house.

WW3: I made some egg toast and had it with cereals before I made it to office in the nick of time.

HK: What’s for lunch honey ? 

WW1: I packed the leftovers from yesterday night dinner. The last night lamb stew still tastes so yum

WW2: I ask my colleague to get me a meal deal from Tesco. I need to go to the office gym so I can’t stuff myself.

WW3: The office lunch sucks man ! The same old chicken casserole with baked potatoes. I wish they changed the menu and the price subsidised was actually what it meant. 🙂

HK: Dinner’s sorted ?

WW1: I had been browsing Jamie Oliver’s Meat free monday recipe. So that’s on my cards today. I am sure the kids gonna love it.

WW2: Oh, its been ages since I caught up with my office folks. A few drinks and will wind up with an ice cream on the couch while I browse.

WW3: I had the lady come in to prepare the fare. My son loves chicken tikka you know. I just need to finish up the dishes before I catch the latest HBO flick.

Apron & Veggies

I hope you enjoyed my conversation with all the above ladies. These conversations are merely animated versions of the exchanges that we ladies have while we are working. But nevertheless its quite tough to work and take care of the household. A lady of the house goes without saying needs to be multifaceted. She has her ambitions to nurse, a child to feed and recreations to add effervescence. Every working lady finds her mantra for the day. So quietly she can satisfy each element of life’s karma. After working for 10 hours a day I can so relate to each of these conversations. Life for me has taken a totally different path today. I haven’t endorsed the extremes in either case but I am somewhere in the doldrums.

I respect and empathise with my clan of working women and I thought of sharing a recipe which could be nutritious and work out charmingly for anyone who wanted to cook and enjoy a good meal at the end of a tiring day. When I came to London for the first time. Pasta for me was such an elaborate affair from checking on al dente, blanching the veggies and preparing the Alfredo sauce. But my neighbour who is a polish lady one day treated me to her quick and easy pasta recipe. I instantly fell in love with it and so did my family. I get a request to prepare it once a week so whenever I am in a rush so this is called for Happy Meal!

I call it the working women’s pasta just to go with the theme of the post. You are free to call it by any name.I am sure the net has similar versions of it but here’s how I do it.

Working Women’s Pasta: This humble Italian dish is spiked with fresh veggies and a no-sauce pasta is topped with fried bacon rashers for added zing. Fresh, Simple & absolutely lovely with PARMIGIANO sprinkled on top.
Ingredients
  • 500 gm fusili or penne
  • 1 garlic,crushed
  • 1 tsp oregano
  • 1 zucchini,thinly sliced
  • 1/2 broccoli,cut in cubes
  • 1 red bell pepper,cut in cubes
  • 2-3 bacon rashers,fry crispy on pan with no oil
  • 1 tbsp Full bodied olive oil for frying
  • PARMIGIANO REGGIANO,sprinkling
  • few sprigs of basil leaves,sprinkling
  • Extra virgin olive oil for drizzle
  • salt and pepper for seasoning
Instructions
  1. Bring a large pan of water to the boil, add the penne and cook for 8 mins.
  2. Take a pan and add oil gently heat and add the crushed garlic.Let the smell of garlic engulf the nostrils.
  3. Then toss in the veggies (zucchini,bell pepper,broccoli) stir fry for 5 minutes. I keep them crunchy and wilting.
  4. Then toss in your pasta and mix it with the veggies and stir fry for 2 minutes with oregano.
  5. Drizzle extra virgin on top generally.
  6. Sprinkle PARMIGIANO generously again goes without saying. And the bacon rashers cut into thin strips.
  7. Top it with few basil leaves and serve hot.
  8. With this I have feeding tantrums with my little one.
