A small tickle from my pickle childhood. For me no recipe is complete without my anecdotes cause that is what inspired me to cook food.During my school life we had the privilege of having a house with a garden and a backyard.My backyard was ordained with a Guava tree,lemon tree and my favorite mango tree.The peculiarity of this mango tree was it bloomed every alternate year.But when it bloomed then god was gracious it would be laden with these succulent and sweet mangoes which anyone could die for.Well we didn’t die but we surely saved ourselves from stone pelting.Now why would a harmless tree cause us such misery.
Flashback : If you have your colony infested with these mischievous brats who would do anything to bite into these fruity delights then comes the angle of misery.When my mom would enjoy this lovely afternoon siesta the miscreants would get into action.There would be a line up of watchers, pickers and finally the most fatal snipers.Now here’s their shrewd plan the watchers would keep a watch out for any movement of the backdoor to open so that they would raise alarm for their timely plight.The agile pickers wouldn’t waste a second to collect the fallen treasures the mangoes.The snipers are the deadliest cause its their aim which would hit the rightful mango and strike it to the ground.By the time my lil sister and I would raise an alarm the battle is lost and the enemy would have achieved their conquest and fled with dignity.But that tree gave us lot more than this.For years we have satiated our palette with tons of jellies,jams and pickles.Thank you my dear Mangi Ferra!!.As I have grown with years my tongue has sampled different types of pickles garlic, chilli ,lemon, jackfruit ,lotus and even prawn and chicken pickles.But with time and a diet conscious me I have shifted my loyalties to the healthier contemporary pickles.
The modern definition of pickle has altered and recipe is a tribute to this new style.
Ingredients for Baby radish pickle:
- 10-12 Red Baby radish (head and tail chopped off)
- 60 ml Rice/Malt Vinegar
- 1-2 garlic pods thinly sliced
- 1 tbsp Kosher/sea salt
- 1 tbsp lemon juice
- 1 tsp castor sugar
- 20 ml water
Preparation method
- This is the simplest recipe which I could have made as it needs no heating or beating just pure shaking. 🙂
- In a glass jar add you radish,salt,sugar and garlic.Top it with vinegar and level it with water so that all the veggies are submerged in the preservatives.
- Now give a good shake to all the ingredients and place it in the refrigerator.
- It would be nice and ready to eat in two days and will stay well over a week.
- This makes an amazing combination with your kebabs and biryani.
