Kathal Ki Sabzi | Raw Jackfruit Curry

Raw jackfruit is known as Kathal in Bihar. Jack fruit trees are found in and around Bihar. It can be quite an intimidating vegetable owing to its complex process of cleaning and cutting. When cut it is extremely sticky and slimy.One needs keeps their hands smeared in oil to prevent it from being slipped. I will take no credit for this as this was done by my mum. Living abroad has given me the advantage of buying pre cleaned and cut raw jackfruit. But someday I wish to master this technique too. For now I just say ‘Hail Asian stores’. 🙂

My mum called Jack fruit as a meat variant for vegetarians. If cooked correct it resembles cooked lamb in texture and taste. The jackfruit is a rich source of dietary fiber and vitamins. It is known for its low sodium and cholesterol content. This is widely eaten raw or ripe all over India.

Raw Jack fruit Curry

Kathal ku Sabzi or Raw Jackfruit Curry : This is a delicious mild spiced jackfruit curry. It goes well with rice or hot rotis and puris. It is especially made in Bihar during the festival of Holi.
Ingredients
  • 500 gm jackfruit
  • 2 tbsp of oil
  • 2 tsp cumin seeds
  • 1 cup grated onions
  • 1 tsp finely chopped ginger
  • 1 tsp finely chopped garlic
  • 2 tsp coriander
  • 1 tsp pepper
  • 1 cup grated tomatoes
  • 1 tsp chilli powder
  • 1/2 tsp turmeric
  • 1/4 tsp garam masala
  • salt to taste
  • finely chopped coriander leaves

Cutting process
  1. While cutting the jackfruit it is very essential to protect your clothes and cutting boards. Cover it with a silver foil to prevent staining. Smear oil in both your hands and even the knife used for cutting. Then carefully cut the jackfruit into two halves. Then a white liquid is secreted by the fruit. Then cut the stalk and the peel the spiny skin from the jackfruit. Cut the jackfruit into equal sized chunks and rinse it with water.
Cooking process
  1. Grind 1 tsp cumin, garlic, ginger,pepper and coriander into a fine paste.
  2. Preferably a pressure cooker, heat oil and add the remaining cumin seeds and let them splutter.
  3. Follow by adding the finely chopped onions. Once the onions are golden brown in colour.
  4. Add your ground paste and give it a quick stir. Then add the powder spices like turmeric and red chilli powder.
  5. Fry until the oil separates and then add your finely chopped tomatoes.
  6. Once the tomatoes are cooked, add your raw jackfruit and salt to taste.
  7. Add 1 cup of water.
  8. Add the garam masala on top and give it a quick stir.
  9. Put the lid on top and give it two whistles.
  10. Then garnish with coriander leaves and serve hot.
