Raw jackfruit is known as Kathal in Bihar. Jack fruit trees are found in and around Bihar. It can be quite an intimidating vegetable owing to its complex process of cleaning and cutting. When cut it is extremely sticky and slimy. One needs keeps their hands smeared in oil to prevent it from being slipped. I will take no credit for this as this was done by my mum. Living abroad has given me the advantage of buying pre cleaned and cut raw jackfruit. But someday I wish to master this technique too. For now I just say ‘Hail Asian stores’. 🙂
My mum called Jack fruit as a meat variant for vegetarians. If cooked correct it resembles cooked lamb in texture and taste. The jackfruit is a rich source of dietary fiber and vitamins. It is known for its low sodium and cholesterol content. This is widely eaten raw or ripe all over India.
