Exotic Gulmohar Luncheon | Marshmallow cupcakes !!

marshmellows_eatenCome spring and there’s something in the air.Also along with the fresh breeze it is also the time to buy new books and stationery.But what i don’t get nostalgic often for is English literature.Despite the fact that i studied english all through school,college and my engineering degree,my recollection of English literature is of how much i disliked reading those chapters,analyzing, summary, answering question and answers.But  I have seen this to be quite a “universal feeling” when uttered “Oh yeah maybe i read this in school” accompanied by a disdainful curl of lip even by seasoned toppers.

Out of those glorified days we had our English reader called as “Gulmohar” I really don’t remember which class but we had a chapter called as “The Luncheon” by “William Somerset Maugham” which for many reasons stayed with me (Probably because it was food 😉 ).This was a short story,about he author who meets a lady, who is an admirer of his stories. She expresses her wish to meet him at a high class restaurant “Foyots“.

 But why did i select this as an anecdote being the selection of those exotic things then merely terms and today bear a completely new meaning.I think that very moment i had taken my memory notebook out and added those names in my bucket list.(Ironically it took me exactly 25 years exactly to relish my palette to those delicacies).As i quote down those famous immortal lines from the book.

Main Course :  Well, it was early in the year for salmon and it was not on the menu.“No,” she answered. “I never eat more than one thing. Unless you have a little caviar. I never mind caviar.”

“I am not in the least hungry,” my guest sighed, “but if you insist I don’t mind having some asparagus.”

Drinks : “My doctor will not let me drink anything but champagne.”

Desserts : At last she finished. “Coffee?! I said. “Yes, just an ice cream and coffee,” she answered.But I have just had a snack and I shall enjoy a peach.”

If you look up the dictionary then “Luncheon” means a “light snack” but here the above it went on the extra heavy side.

marshmellows (18 of 22)Many times in our life on many occasions we keep up a smiling, insouciant facade while inwardly we are suffering agonies when our guest/friend splurges on our hospitality or at a philosophical level also our emotions.Along with this bucket-list somewhere down the line I also added marshmallows.Hence the recipe!!

 Ingredients for Marshmallow cupcake :

  • 225 gm unsalted butter
  • 225 gm of self raising flour
  • 225 gm of castor sugar
  • 1 tbsp vanilla extract
  • pinch of salt
  • 50 mini marshmallows
  • pink food coloring
  • 4 medium eggs
  • 24 cup cakes cases
  • Homemade vanilla syrup (recipe below)

Preparation method

  1. Preheat the oven to 175C for 20 minutes.
  2. One very important tip all the ingredients must be a room temperature.Butter should be of melt in mouth texture.The eggs should be placed in Luke warm water.
  3. Meanwhile, in a mixing bowl add the butter,vanilla,sugar and salt make it fluffy then gradually add the lightly beaten egg.If the mixture starts to curdle start adding a little flour.Then gradually sift in the flour with light folds.
  4. Stir in the pink food color and gently fold in the marshmallows.
  5. Then add the cases to the cupcake/muffin tray and add the above mixture with a help of a deep spoon and flatten the top.Make sure the marshmallows are not popping out.
  6. Then put the cupcakes in the lowest oven shelf and start baking for 20-22 minutes.
  7. While the cupcakes are getting baked we need to make a vanilla syrup.Mix 60 ml water with 50 gms of castor sugar and let the sugar melt.Remove from heat and let it cool for 10 minutes and then add the 1 tsp vanilla extract.
  8. Once your cupcakes are done they will be golden-yellow on top.It should bounce back on touch and if you pass a toothpick it would come out clean with no stickiness.
  9. While the cupcakes are still hot brush the above vanilla syrup on top of the cupcakes.

Once the cupcake is cooled I added fresh whipped cream and icing sugar frosting which is completely optional.
